Pickled Asparagus!

As many know Jeff's parents - on their farm on the Mississippi - grew many fruits and vegetables. One of our favorites has been asparagus. Asparagus fresh from the garden
is the best but it is always fun to try something new.
This spring as I was looking for pickled Jalapeno Peppers I found pickled asparagus - so I decided why not try this -- and of course Jeff the encourager and helper said we should also pressure cook some as well. Look out kids when Dad retires it is hard to say what we might be delivering to your food shelves.

Spring Flowers

My "Bev Flower" Bed is beautiful this spring!

Lauren Gayle is "3" on the 23rd of May

Happy Birthday - gotta love that smile. Our princess enjoys pretending - she can tell a great story - she enjoys the outdoors - and listening to stories - we often find her with a book. She loves her bags and can set-up a picnic lunch in a moments notice.

Grandpa Jeff helps Lauren with her birthday candles!

Look at Lauren's & Jeff's expressions on their faces - moral support starts at a very young age. We will always be there helping - no matter what the task maybe :)

Lauren's Birthday Party

No party is complete without cousins to help celebrate and play with new toys :) John and Natalie and Mom and Dad joined the fun --- and then there is Ean - checking out this new play box - Lauren, I am sure will let him know :)
We enjoy listening to the little ones talk as they play together - becoming playmates - time goes oh too quickly!

There are walleyes in Esquagamah Lake!

Jeff and I were at the cabin this weekend and it just happened to be the fishing opener. I think this is the first time we have fished the opener together - we're practicing Jeff being retired :)
Well as you can see we did very well! At the landing we did get a tip from a young man (a Dan Nadeau look alike) as to what the walleyes were biting on. He was right. We caught our limit of 6 that were between 14 - 16 inches.

Phyllo/Filo Dough Class

Since Abby and I enjoy taking cooking classes together, we decided to find another that would be fun. So we took a class about using Phyllo/Filo dough. Osseo Community Ed has a great selection of classes. Last week we decided to experiment with some recipes.....
